Ingredients
1 pack of Dromod gluten-free Boxty
1 tin of butter beans, drained
1 tin of chopped tomatoes
1 small red onion diced
2 cloves of garlic, finely chopped
1 tsp smoked paprika
1/2 tsp chilli flakes
1 tsp sugar
Chopped parsley to garnish
Salt and black pepper to taste
Directions
- Heat a little oil in a saucepan, fry the onion and garlic until soft.
- Add the tin of tomatoes and gently simmer for 3mins
- Add the paprika, chilli flakes and sugar and mix together.
- Add the tin of butterbeans and simmer for a further 5mins
- Cook the gluten-free Boxty as per pack instructions.
- To serve, place the boxty on a serving plate and top with spoons of the smokey beans mix.
- Add salt and pepper to taste. To finish, add chopped parsley to garnish.
