Pancakes with greek yogurt, lemon zest & pistachio

Ingredients:

  • 1 pack Dromod Irish Pancakes
  • 2 tbsp Greek yoghurt (or coconut yoghurt for dairy-free)
  • 1–2 tbsp honey or maple syrup
  • 1 tbsp pistachios, chopped
  • 1/2 fresh lemon, cut into wedges
  • Optional: pinch of lemon zest or rose petals for garnish

Directions:

Warm the pancakes:

  • Lightly toast or microwave the Dromod Pancakes until fluffy and warm.

Plate up:

  • Stack the pancakes and add spoonfuls of Greek yoghurt between or on top.

Add toppings:

  • Drizzle generously with honey or maple syrup, scatter over chopped pistachios, and add a squeeze of lemon.

Serve:

  • Garnish with lemon wedges, a pinch of zest, and enjoy while warm.
