Our Story



About Us
We’re a second generation family business, but really we’ve been going much longer than that. From great grandad’s horse and cart travelling shop, to the grocery granny and grandad ran together, there’s always been an entrepreneurial streak in our family.
We’re fiercely proud to carry on this tradition today and bring granny’s much loved homemade recipes to a whole new generation.
Company Timeline

1990
Dromod Boxty began - Timmy started making his Grandmothers recipe of Boxty & Potato bread and selling it to the locals of Dromod village

1991
Timmy also began making paradise slab and apple tarts, which were a great hit but time consuming!

1992
The 2nd generation in the making - Aine out on deliveries.
1994
Investments were made in the bakery with the addition of hotplates to make the processes quicker.
He also started making brown bread to meet the demands of customers.

1995
Timmy & Aine on deliveries.
Pancakes were also added to the Dromod range and were a huge hit! Made from grannys recipe they were light a fluffy and flew off the shelves.
1996
Another big investment was made in the purchase of a potato bread machine which is still in use to this day. This machine flattens out the dough and shapes it ready for the hotplates.
1997
Due to the huge demand for pancakes Timmy got a custom made pancake batter dispenser for the hotplates installed in the bakery. This dispenser pumps the pancake batter in to its custome size on the hotplate ready for frying.
1999
Started working with a supplier that supplied pre-peeled potatoes, no more hand peeling!!

2015
The next generation steps in - Aine Faughnan takes over leadership of the company with Timmy happy to step back and share his wisdom.
2016
We joined the SuperValu Food Academy, marking a new milestone in business development.
The Food Academy promotes Irish suppliers and supports local businesses. This contract opened doors for Dromod Boxty and grew our stockists in the West, Midlands and East of the country.

2017
Aine put her stamp on the business and undertook a full rebrand to enhance brand identity and market presence.
2018
Expanded distribution to meet growing demand, adding a second van to support increased store stocking.
2019
Coordinated and supported a Boxty Festival in Carrick-on-Shannon.
Dispatched our first international order to the U.S.
Awarded the Great Taste Award for our Potato Bread.

2020
Accepted into the KPMG Going for Growth program, supporting female entrepreneurs.
Secured a trial run with the Grow with Aldi program, which led to a contract to supply Boxty.
Named overall winner for Leitrim in the National Enterprise Awards.

2021
Became members of Origin Green, Ireland’s sustainability program.
Awarded Gold at the Irish Quality Food & Drink Awards for Boxty and Pancakes.

2022
Bronze at Blas na hEireann for Potato Bread and Silver for Boxty.

2023
Launched our Kids Pancakes on the market.
Bronze at Blas na hEireann for both Potato Bread and Gluten-Free Boxty.

2024
Achieved Gold Membership in Origin Green, a testament to sustainable practices.
Recognized at the Blas na hEireann Awards with Silver for Boxty and Gluten-Free Boxty.
Gold at the Irish Quality Food & Drink Awards for Potato Bread, with Silver for Pancakes and Boxty.
