Gluten-free Boxty with chorizo & chickpea couscous

Ingredients

1 pack of Dromod gluten-free Boxty
2 tbsp olive oil
150g of couscous
300ml of chicken stock
200g of chorizo diced
200g of chickpeas (drained)
1 small red onion diced
2 cloves of garlic diced
100g of feta cheese diced
Salt and black pepper to taste

Directions

  1. Prepare couscous with chicken stock, according to the packet’s instructions.
  2. Heat the oil in a pan, and when hot, cook the chorizo for 3-4mins, remove the chorizo with a slotted spoon and set aside.
  3. Add the onion and garlic to the pan and cook for 2-3mins until soft.
  4. Add back in the chorizo, the chickpeas and the cooked couscous to the pan and cook for a further 5mins.
  5. Cook the gluten-free Boxty as per pack instructions.
  6. To serve, place the boxty on a serving plate and top with spoons of the chorizo, couscous and chickpeas mix. Add salt and pepper to taste. To finish, scatter some cubes of feta cheese and enjoy!
