Ingredients
1 pack of Dromod gluten-free Boxty
2 tbsp olive oil
150g of couscous
300ml of chicken stock
200g of chorizo diced
200g of chickpeas (drained)
1 small red onion diced
2 cloves of garlic diced
100g of feta cheese diced
Salt and black pepper to taste
Directions
- Prepare couscous with chicken stock, according to the packet’s instructions.
- Heat the oil in a pan, and when hot, cook the chorizo for 3-4mins, remove the chorizo with a slotted spoon and set aside.
- Add the onion and garlic to the pan and cook for 2-3mins until soft.
- Add back in the chorizo, the chickpeas and the cooked couscous to the pan and cook for a further 5mins.
- Cook the gluten-free Boxty as per pack instructions.
- To serve, place the boxty on a serving plate and top with spoons of the chorizo, couscous and chickpeas mix. Add salt and pepper to taste. To finish, scatter some cubes of feta cheese and enjoy!
