Ingredients:
- 2 slices Dromod Gluten Free Boxty
- 1–2 chicken breasts, grilled and sliced
- 1 cos or romaine lettuce, chopped
- 2 eggs, boiled and halved
- 4 tbsp Caesar dressing (store-bought or homemade)
- 2 tbsp Parmesan shavings
- Optional: black pepper, lemon wedges
Directions:
Prepare the chicken:
- Grill or pan-sear chicken breasts with olive oil, salt, and pepper. Slice once cooked through and rested.
Toast the boxty:
- Heat the Dromod Gluten Free Boxty in a dry pan or toaster until golden and crisp.
Assemble the salad:
- Toss lettuce with Caesar dressing and a pinch of black pepper. Plate over warm boxty.
Top it off:
- Add sliced chicken, a halved boiled egg, and scatter with Parmesan shavings. Serve immediately.
