Boxty with Prawn cocktail salad

Ingredients

1 pack of Dromod Boxty

2 big handfuls of fresh or frozen prawns – ensure they are fully thawed before use

Iceberg lettuce

50g Red onion

1 Avocado

100g Sliced cucumber

Marie rose sauce –

200ml of tomato ketchup

2 tbsp of mayonnaise

5 drops of tabasco (more if you prefer hotter!)

Squeeze of lemon

Salt and pepper to taste

Directions

  1. Make the salad by shredding the iceberg lettuce, thinly slicing the cucumber, avocado and red onion. Set aside.
  2. To make the Marie rose sauce, combine the ingredients listed above in a small bowl and mix together until smooth.
  3. Toast the Dromod Boxty as per the pack instructions.
  4. To serve, place the boxty on a plate topped with the mixed salad, prawns and drizzle with Marie rose sauce.
  5. Add salt & pepper to taste if required.
