Ingredients
1 pack of Dromod Boxty
2 big handfuls of fresh or frozen prawns – ensure they are fully thawed before use
Iceberg lettuce
50g Red onion
1 Avocado
100g Sliced cucumber
Marie rose sauce –
200ml of tomato ketchup
2 tbsp of mayonnaise
5 drops of tabasco (more if you prefer hotter!)
Squeeze of lemon
Salt and pepper to taste
Directions
- Make the salad by shredding the iceberg lettuce, thinly slicing the cucumber, avocado and red onion. Set aside.
- To make the Marie rose sauce, combine the ingredients listed above in a small bowl and mix together until smooth.
- Toast the Dromod Boxty as per the pack instructions.
- To serve, place the boxty on a plate topped with the mixed salad, prawns and drizzle with Marie rose sauce.
- Add salt & pepper to taste if required.
