Boxty pizza with mozzarella, salami & basil

Ingredients:

  • 2 slices of Dromod Boxty (classic or gluten-free)
  • 100g mozzarella cheese (sliced or shredded)
  • 6–8 slices of Italian salami or cured ham
  • Fresh basil leaves
  • Olive oil
  • Cracked black pepper
  • Optional: tomato paste or pesto as a base layer

Directions:

Prepare the base:

  • Heat a non-stick pan over medium heat. Add a light drizzle of olive oil. Toast the boxty slices on both sides until golden and crisp (about 2–3 mins per side).

Assemble toppings:

  • Spread a thin layer of tomato paste or pesto if using. Add slices of mozzarella and allow to melt slightly. Remove from heat once the cheese is gooey.

Top it off:

  • Add curls of salami or cured ham on top. Garnish with fresh basil and a generous crack of black pepper.

Serve warm, either whole or cut into wedges, as a fun and flavourful lunch, party snack, or sharing platter.
