Ingredients:
- 2 slices of Dromod Boxty (classic or gluten-free)
- 100g mozzarella cheese (sliced or shredded)
- 6–8 slices of Italian salami or cured ham
- Fresh basil leaves
- Olive oil
- Cracked black pepper
- Optional: tomato paste or pesto as a base layer
Directions:
Prepare the base:
- Heat a non-stick pan over medium heat. Add a light drizzle of olive oil. Toast the boxty slices on both sides until golden and crisp (about 2–3 mins per side).
Assemble toppings:
- Spread a thin layer of tomato paste or pesto if using. Add slices of mozzarella and allow to melt slightly. Remove from heat once the cheese is gooey.
Top it off:
- Add curls of salami or cured ham on top. Garnish with fresh basil and a generous crack of black pepper.
Serve warm, either whole or cut into wedges, as a fun and flavourful lunch, party snack, or sharing platter.
