Ingredients:
- 2 slices Dromod Irish Homemade Boxty
- 100g smoked salmon
- 100g crème fraîche or sour cream
- 1 tsp fresh dill (plus extra for garnish)
- 1 tsp fresh chives or parsley, finely chopped
- 1/2 tsp lemon zest
- 1 tsp lemon juice
- Fresh lemon slices, to serve
- Salt & black pepper
Directions:
Prepare the herbed crème fraîche:
- In a bowl, mix crème fraîche with chopped herbs, lemon zest, and juice. Season with salt and pepper to taste. Chill until ready to use.
Toast the Boxty:
- Lightly pan-fry or toast the boxty slices until golden. Cut into quarters or triangles.
Assemble:
- Top each boxty triangle with a dollop of herbed crème fraîche, a ribbon of smoked salmon, and a small wedge of lemon.
Garnish & Serve:
- Finish with fresh dill and a twist of black pepper. Serve immediately.
