Boxty with smoked salmon & creamy chives

Ingredients:

  • 2 slices Dromod Irish Homemade Boxty
  • 100g smoked salmon
  • 100g crème fraîche or sour cream
  • 1 tsp fresh dill (plus extra for garnish)
  • 1 tsp fresh chives or parsley, finely chopped
  • 1/2 tsp lemon zest
  • 1 tsp lemon juice
  • Fresh lemon slices, to serve
  • Salt & black pepper

Directions:

 Prepare the herbed crème fraîche:
  • In a bowl, mix crème fraîche with chopped herbs, lemon zest, and juice. Season with salt and pepper to taste. Chill until ready to use.

Toast the Boxty:

  • Lightly pan-fry or toast the boxty slices until golden. Cut into quarters or triangles.

Assemble:

  • Top each boxty triangle with a dollop of herbed crème fraîche, a ribbon of smoked salmon, and a small wedge of lemon.

Garnish & Serve:

  • Finish with fresh dill and a twist of black pepper. Serve immediately.
