Potato bread with scrambled tofu & avocado

Ingredients:

  • 1 pack firm tofu (approx. 200–250g), crumbled
  • 1 tbsp olive oil
  • 1/2 small onion, finely diced
  • 1/2 tsp turmeric
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika or black salt (optional for “eggy” flavour)
  • Salt & pepper to taste
  • 1 ripe avocado, sliced
  • 1 tbsp pumpkin seeds (toasted if preferred)
  • A few mint leaves for garnish
  • 2 slices Dromod Irish Potato Bread, toasted or pan-fried

Directions:

Prep the tofu scramble:

  • Heat olive oil in a pan over medium heat. Sauté the onion until soft (about 3–4 minutes). Add the crumbled tofu, turmeric, garlic powder, paprika, salt and pepper. Cook for 5–7 minutes, stirring gently until golden and fragrant.

Toast the potato bread:

  • While the tofu is cooking, heat the Dromod Potato Bread slices on a dry pan or grill until crisp and golden on both sides.

Assemble the plate:

  • Serve tofu scramble alongside sliced avocado. Sprinkle with pumpkin seeds and a crack of black pepper. Add mint leaves for a fresh finish.

Serve immediately:

  • Enjoy warm as a balanced, nutritious, and protein-rich start to your day!
