2 protein pancakes (Dromod Protein Pancakes)
2 bacon medallions (grilled or pan-fried)
2 eggs (poached or lightly scrambled)
Salt, pepper, and red chili flakes to taste
A drizzle of maple syrup (optional)
Directions
- Cook the Bacon Medallions – Grill or pan-fry the bacon medallions over medium heat for about 2-3 minutes per side until crispy.
- Cook the Eggs – Poach the eggs until the whites are set but the yolks remain runny.
Alternatively, scramble them lightly if you prefer.
- Prepare the Pancakes – Heat in the microwave or pop in the toaster as per back-of-pack instructions.
- Assemble the Dish – Place the warm protein pancakes on a plate. Layer the crispy bacon medallions on top. Add the poached or scrambled eggs. Season with salt, pepper, and a pinch of red chili flakes.
- Finish & Serve
- Drizzle with a little maple syrup (optional) for a touch of sweetness.
